The soak is what brings the heat. Start tasting around 10-15 minutes. If that's good for those people, you can always take some out for them with a scoop.
We generally start tasting around 15 to 20 and taste every 5 minutes.
With that mixture above, 20 minutes should be good for an out of town crew

My mother in law and her sister are nearly 80 and always tell me they are too spicy. Then they proceed to eat until they’re sick. Make it spicy and let those few figure it out.

30 lbs. on order from LA Crawyfish.
Got a Bayou Classic 80 qt pot with basket, the double jet burner, and a paddle to stir.
Question, so they are coming in a cooler with ice packs I assume. Arriving before 12 noon eastern. Planning to cook at 4pm. Can I leave them in the cooler til about 3:30, then rinse em off in a laundry basket?

I would just put them in the ice chest you're going to rinse them in. Keep the lid open some so it gets air, keep the plug out, and keep them wet with either a wet towel or a bag of ice on them

You've gotten good advice from people here. Its one of those things where you follow a basic process and you add your own little touches as you boil more and more

I used a little more powder than this for a group from Nebraska and Ohio and they were perfect for them. Added cayenne, powder, and liquid boil for next couple batches for the locals.

Dumped the onions, lemons, etc. in without the basket.

Been there before. I like to put all that stuff in a mesh laundry bag so it's easy to fish out and keep it out all the stuff we actually eat.
