Belle River and Spillway generally are more available around this time, which is later in the season.

Most places have multiple suppliers. But, generally people don't ask. Do you ask what farm your steak came from?

Most places you just get a mix. In Houston and Lafayette, they have more "grading" i.e. they are sorted into sizes and they will sell sacks by the size. Of course, this takes effort which adds to the price.
