Are cracklins and pork skins the same thing? I just got a 20 gallon jambalaya pot and I want to season it. I see a lot of people say fry fish or cook cracklins in it to get a good season. I want to give cracklins a try, but wasn't sure what to ask for at the meat market. Any help is appreciated.

nope.

Pork rinds or pork skins which are made from just the skin of the hog. Cracklins are the skin with the layer of fat beneath, usually from skin-on pork belly.

They are NOT the same and the NOLA restaurants that list cracklins and bring pork skins to your table need to be cut off. Take a lesson from those Acadiana folks.
