Something I've wanted to make for a long time and I have no interest in the Super Bowl (communist, I know) so I tackled it today.

Start with bacon in olive oil.





Set the bacon aside and brown the chicken legs and thighs.



Set the chicken aside and get the veggies going. Carrots, onions and minced garlic at the end.



Add the red wine, chicken stock, chicken and bacon and simmer for a bit.



Into the oven it goes for a half hour.

While it's in the oven brown the cremini mushrooms.





Out of the oven.



Add the pearl onions and mushrooms and a flour slurry and simmer until the sauce thickens.



Bon appetit.

Looks good. About how much wine did you use?

Probably 3/4 of a bottle. I added another cup to the final simmer which is probably why I had to add more flour slurry to thicken the sauce.

When I do this or beef bourguinon, which is the same recipe but with beef, I typically use a bottle then use stock to make up the rest to bring the water up above the meat for the braise in the oven.

I made Pioneer Woman’s crash potatoes and served it over them. I wanted something with a bit of crunch on the bottom and I’m not a mashed potato maker.
