This is the same method I use, except I add fresh dill to the brine creating gravlax. If it's summer, and the dill has wilted, I use a few drops of dill oil (from Amazon) to add that fresh flavor.

Trying but last years covid stuff kinda threw that out of whack. Once I get some other irons out the fire ill get back on it. Look at TAs post in the bourbon thread he has a few going on...I know a way to mule things up there. Text me if ya need
