Anybody remember the cornbread they would serve in a black iron skillet. The best I've ever had!!!

Cock of the Walk was/is a chain originally out of Natchez and (now?) out of Jackson.

Cock of The Walk Skillet Bread
Cock Of The Walk Skillet Cornbread A La Cock Of The Walk
2 teaspoons bacon drippings or butter
1 large egg
2 cups buttermilk
1 3/4 cups white cornmeal
1 teasoon baking powder
1 teaspoon baking soda
1 teaspoon salt
Coat bottom and sides of a 10-inch cast-iron skillet with butter or bacon drippings.
Place in a pre-heated 450-degree oven.
Stir together egg and buttermilk. Add the cornmeal, stirring well. Stir in baking powder, soda, and salt. Pour batter into hot skillet.
Bake at 450 degrees for 15 minutes or until lightly brown.
*Add chopped onion or diced jalepeno peppers to your batter for a change of pace.
Yield: 6 servings

I remember the waiters flipped the cornbread from the skillet into the air, most times back again

There is still one in Jackson, MS. I ate at it last year for the first time since it existed in Lafayette. Brought back a ton of memories. Still flipped the cornbread. We even ordered a pot of greens to go with the catfish, fries and cornbread
