can anyone advise me where the closest place to purchase a small pig for a cochon de lait? Closest to BTR that is...and approximately how much are they?

Rouchers in Plaquemine, about a 20 min. drive from the new bridge.

Inject it and rub it down, put it in a double garbage bag on ice for a few days.......

Scallans meat market on Airline.

They have them pre-injected as well.

Chris' specialty meats-got a small (~45 pounds) last time I did one-already injected and seasoned. It was stellar.

I don't remember-it isn't Boston Butt cheap, but not whole ribeye either. Give them a call. Scallans might be cheaper, Chris' was closer.

the small pigs are around $1.00 to $1.75 a pound

Occasionally, during the college fraternity days, a pig was borrowed as well as the bed springs from a dorm room. The springs made an excellent way to wire up the pig and hook to a pole by chain and rotate. At least that's what I heard... I wonder what the Statute of Limitations are for "borrowed pigs"?
