Do you use regular ground beff or choped steak? I read somewhere that most contest cooking outfits use steak meat?
Anyone have a good quick recipie?

I dont have a quick recipe.. But I do use sirloin a lot and cut it into chunks and let it stew in the chili. The recipe sticky should have a copy of my 5 meat 5 bean chili.

John Folse has a good one for a sirloin tip roast - its incredible - I don't have a copy of it at work, but it used to be on the WAFB website

Use skirt steak. Trust me. Slice it into strips with the grain and then into small cubes against the grain (prior to cooking, of course).
I used to be a Chuck guy (same method) but took a cue from someone on here to use skirt and it was significantly better.
Also consider using homemade chili powder.
