Pretty solid. I go a few shades darker with the roux, and add a little less stock. But that's all personal preferences.

I prefer to simmer for a few hours as well. And I don't brown the sausage beforehand either.

I'd brown the sausage, but everything else looks good.

No okra here either. Never liked it in my gumbo.

Looks great. Nice roux. Sometimes I'll brown the sausage and chicken and use the fat as my roux oil. Just adds another layer of flavor.
