Tom was a treasure to radio listeners. It was so much better to listen to him than to the politics if no sports are on.

Prudhomme's book is cajun with several dishes easily qualifying as creole or New Orleans style (there is a jambalaya with tomatoes that is baked that I like to make from time to time).

I use his book and Folse's "The Evolution of Cajun and Creole Cuisine" the most.

I have a book from Commanders Palace that is very extensive and certainly New Orleans cuisine.
