I've made Pork chili verde several times. Trying a red one for championship Saturday.

I've done it in the crock pot.

Make sure to pan fry them after shredding to get that classic crisp on them.

You need a beer & orange if you want the traditional flavor.

Are you going to cut that pig or cook it whole?

I'm finishing on the grill with smoke. Will pull it and reincorporate into chili.

As I’ve looked up more and more authentic Mexican recipes from online and my old neighbor/Mexican grandma. I’ve found out that the only fats they use is animal fats.

BigDropper, based on your recommendation; I put homebrewed pilsner in the pot and satsuma juice on the pork as a final treatment.

When you do it in a slow cooker or instant pot, you can preserve the cooking liquid for braising when you serve. The Kitchn slow cooker carnitas are pretty danged good and extremely easy.
