Canning help

I am new to canning, and am really starting to enjoy it. I have a situation in which I need a ruling.
I am making pepper jelly. When I pulled the jars out of the boiler, they "pinged" almost immediately. However, when I went to move them to another rack, they unpopped. After sitting for a minutes, the pinged/popped down again. Do I need to rebathe them or are the ok?

Also, thanks for the pepper jelly recipe No8Easy. I forgot lemon juice but imagine it'll be just fine. This stuff looks amazing.

When in doubt, simply store in the fridge. A high-sugar item like pepper jelly will keep for months under refrigeration, regardless of the jar's seal.

I dont use a boiler, I just boil my lids and screw the lid on tight and dont touch them till they are 100% cool preferably the next day.

They are fine. That happens from time to time. I would boil again only with high acid like tomatos. I just made 20 pints of blueberry jam from my blueberries. I still have buckets to pick.
