Candy making question

I am having some trouble with a batch of chocolate peanut candy. The recipe simply calls for melting some ingredients (mainly chocolate) and then mixing in salted peanuts. You then spoon wads of this onto a cookie sheet to cool into clusters.

Trouble is, the mixture has turned into a crumbly mess that is a little oily and will not harden. Any idea what caused this?

A couple things could have happened—you can have overheated the chocolate when melting, which can cause it to separate, become chalky/grainy, and often taste scorched.
Sometimes, chocolate will separate/seize if water is added; were any of your utensils or bowls wet/damp?

Finally, you might be using a chocolate especially poorly suited to remelting. Some chocolates easily go out of temper & look dull after melting, unless you’re properly stirring (the cocoa butter crystals become mis-aligned). That would account for a dull, ugly finish, but not necessarily an oily separation.

Sometimes adding a little shortening (like 1 tbs) to the chocolate when you're melting it will help make it smoother.

Heat your chocolate in a double boiler and add 1 Tablespoon of melted paraffin to it when it has melted.

This gives me some things to think about. I heated in a crock pot and no scorched smell, but maybe I overheated. This gives me some good things to think about, though. Thanks to all who replied.

sounds like it seized, just a drop of water will do it.
the solution is to add boiling water bit by bit until the chocolate all melts but you may have to use it for something else like chocolate sauce
