And ironically we never use it as a course in itself. Makes great chicken salads, enchiladas, etc.

Chicken, cheese, spinach romaine arugula blend, purple onion , carrot, cucumber, strawberries, dressing, grape tomato and toasted walnuts

Slice red and yellow grape tomatoes and throw it in a bag with some sliced red onions, fresh parsley, salt, pepper and a homemade balsamic dressing.
Throw that mix on top of a bed of spinach and sprinkle with feta.
I also enjoy summer squash salads, radish salads, spinach and strawberry salads, grilled zucchini salads, southwest salads, etc.
I eat a salad a day during the week. I fricking love salads.

Not my salad, but have copied many time to rave reviews...
1/2 cup chopped pecans
1/4 cup dried cranberries
1/4 cup balsamic vinegar
1 tablespoon sugar
2tablespoon Steen’s Cane Syrup
1 cup blue cheese crumbled
1 cup vegetable oil
salt and pepper to taste
10 cups mixed salad greens, rinsed and dried
2 Ripe pears, cored and sliced thinly
Preheat the oven to 350 degrees F. Spread the pecans out on a
baking sheet in a single layer. Bake for 8 to 10 minutes in
the oven, or until lightly toasted. In a mixing bowl, combine the cranberries, vinegar, sugar, Steen’s Cane Syrup and blue
cheese. Mix gently with a spoon while gradually adding oil, and season w
ith salt and pepper. In a salad bowl, toss
together the greens, pears, and enough of the cranberry mixture to coat. Sprinkle with pecans, and serve.
ETA: don't want to be accused of stalking you. Your thread came up first when I checked the FDB thread.

My mom makes one of these. I'm not even a huge salad fan, but it is

Sliced firm pear, shaved manchego cheese, frisee or other bitter greens, and decent sized chunks of crispy bacon. Simple french vinagrette w/dijon, red wine vinegar, and EVOO.
Damn that sounds good
