Well, it IS a tradition, for maybe the majority of crawfish boilers in south LA, especially restaurants. Soaking is also a tradition. I wish someone would do a special on the many ways to boil and season crawfish. Would be interesting and funny to see all the idiosyncrasies. I'd love to see something like getting 5 people who boil and season crawfish different ways and do taste tests. Only constant would have to be the type of seasoning is the same.

The winner is whoever doesn't boil the crawfish. Drop em, wait for the foam, cut the heat, soak for 30
