brunch at coquette, review

ive had coquette's food before at paradigm but never been to the restaurant. sunday we went to brunch there
really nice place inside, very comfortable and not ridiculously loud like similar small spaces. the service is prompt & professional.
but...even after i'd mentioned we'd not been there before, the server made no attempt to suggest menu items or make recommendations. i straight asked her what she'd suggest, and got "its all good". ok...fine
we ordered:
1) smoked catfish dip appetizer
2) whole fried chicken lunch
3) a bloody and a pimms cocktail
the catfish dip was incredible, it looks like this:
very tasty, interesting flavors and textures. home run.
next came the chicken, which looked like the most appetizing plate of food i'd seen in a long while. it looks like this, and comes with sides (mashed potatoes, biscuits, red beans & cole slaw...we also order a side of corn pudding)
the ingredients used here were first class, and especially with the chicken, cooked perfectly crisp and super juicy. the problem was, including all the sides, the food was complete un-seasoned. i mean literally...no salt that i could tell, no pepper component, no herbs, nothing. the potatoes were flavorless, the chicken while perfectly cooked was not seasoned at all, and the corn pudding was just some kind of reconstituted corn meal devoid of any other flavor at all.
we ate our fill, and while it was certainly good due to the quality of the groceries, i left unsatisfied. i get the "farm-to-table" concept, and i enjoy it, when it tastes good. nothing in the second course was interesting or exciting, at all, and i'm an easy grader. bland is the best way i can describe the course.
just me, or has anyone else found this to be the case?

I've been twice for brunch (both probably 2 years ago) and came away impressed both times.

Coquette is an outstanding restaurant. It seems like you're disappointed your waitress didn't give you a happy ending or something.
