I'm going to highly recommend this book to my food board friends. Since great dishes begin with quality stock, this book is an excellent read since it explains in good details how to achieve master stocks, why things happen in the cooking process, how to store them, what you can make with them, etc.
Definitely worth the twelve bucks.
