Broccoli Casserole Recipes

Locally Moe's BBQ made THE MOST delish broc casserole I can't find the recipe on the internet for... Any recipe ideas?

One of the many is:

1 part - Steamed broccoli (chopped to give small pieces)
2 parts - Cooked white rice
1-2 parts - Cheese sauce (Velveeta or other) If using cheddar, gouda, or other yellow cheese, you might make a light béchamel to carry the cheese).


OK to add


Bread crumbs or cracker crumbs or toasted onions over the top
(1/4 part) Butter sautéed onion
(1/4 part) Picante sauce (a favorite at our house)
1 or 2 dashes - Red cayenne pepper
a little garlic
You get the idea

Assemble and bake at 350 F until bubbly

Re: Cheese sauce. If you're lazy, in a pinch, or a bachelor cooking for one, Campbell's Broccoli Cheese soup is pretty good. And I'm finicky about that sort of thing. I won't touch anything made with their Cream of Mushroom soup but the Broccoli Cheese is fine with me.

I can’t imagine any broccoli casserole is better than good ole roasted or steamed broccoli.

Holly Clegg has some pretty good ones. Her recipe for chicken divan is the best that I've ever ate. I lost the recipe when I moved back to Denham Springs from Montgomery, Al. If I find it I'll be sure to post it.

The chicken divan recipe that I'm referring to by Holly Clegg is from her first cookbook. This book was published before she decided to take the healthy route. I've tried and I can't find it anywhere.
