This is very true. I start my lump charcoal in a chimney starter then transfer those hot coals onto coals already mounded in the egg. Keep your vents on top and bottom open to a very minimum.
If you start your coals in the egg be careful not to let it get too hot with vents open.
It takes a long time to cool down all that ceramic once heated past smoking temps.

Agree, doing something low and slow the first few times. I would recommend ribs in the low 200’s.

Right. I use a chimney. I fill the egg, and sort of make a hole/depression in the middle, where I dump the hot coals.

We got our BGE at an Eggfest in Ocala and the dealer didn't say anything about temp. restrictions.

Baby backs or pork butts would be my first project. Very forgiving.

Yes, it's to burn off any oils or manufacture residue. Pretty much have to do this on all pits and smokers.

First thing I did was pork ribs, St. Louis style. I bought a rib stand as well.

I did two drunk chickens last weekend. Rubbed them down just like I do butts. Spray a concoction on there every little while.
