I plan to make a batch of homemade boudin balls this weekend. Does anyone have a solid recipe for boudin? I can tinker with Donald Link's recipe unless someone has a better option.

I dont have an exact recipe but I know the Best Stop recipe is somewhere in here if you reduce the recipe enough.
60 lb pork
5 lb pork liver
onion
bell pepper
cayenne
20 lb rice
He claims he ends up with 100 lb so that would mean the onion and bell pepper would account for an extra 15 lb in that recipe. Im sure there is maybe something else in there the owner didnt talk about.
So I guess you could break it down to
6 lb pork butt
.5 lb pork liver
2 lb rice
1 bell pepper
2 onion
Basically you would boil the meat save some liquid and then cook the rice. Run the meat and cooked onion/pepper mixture through a meat grinder. Add to the rice season to your taste add some green onion then load into some hog casing.

Donald Link's recipe
the last two times i've made my own boudin, i used Link's recipe. i had to reduce the salt, because he likes a lot, but otherwise it came out good. not the best i've had but certainly good. his is the only recipe i've tried.
