Boneless Veal Shoulder

I picked up one of these on sale today at the butcher shop. I’ve never seen this cut and do t have much experience with veal. Any ideas for this? Thinking of the standard reverse sear in the BGE.

Did this last night. Treated it like a prime rib. Rubbed it with Penzey's Prime Rib Rub and smoked it at 250 until internal temp 115. Pulled it off and let it rest for a bit while I ramped up for a sear. Seared it until browned nicely. Serving internal temp was 129.
Unfortunately, I did get any pics. The texture was exactly that of prime rib which I thought was great out of a shoulder cut. Veal wasn't nearly as flavorful as a regular steak. I will definitely get one again if they are one sale. Will try a different rub next time. Possibly injecting with beef broth would be beneficial.
