Well I did it and I survived.

Thanks to everyone for the input. They were well received but I definitely found some things that I will do differently next time.

Overall great day and can't wait to try my hand at it again soon.

Tony's doesn't ship from what they told me, but i got lucky and my nephew was in BR this week and went by there to pick some up for me.

Don't worry about the time or how good your burner is, just make sure that the pot is at a rolling boil when you put the crawfish in. Turn of the fire once they start to float. As long as you let them soak for 15 minutes or so they will never be under cooked.

DO NOT OVERCOOK THEM !

I have never heard someone complain about undercooked crawfish.

Yeah I would echo this sentiment. I typically put crawfish into a boiling pot and immediately turn off my burner. Let it sit for 5-10 min depending on how I'm feeling.

The only thing that actually needs to be watched timewise are potatoes. Not long enough and they are hard on the inside, too long and they are mushy. Depending on the size of the pot/taters, this takes anywhere from 30-60min.

Corn and sausage really doesnt matter, you are not going to overcook or undercook either.

Seasoning is all personal preference. I like mine spicy as hell.

Crawfish don't overcook that easy. At this time of the year, you can boil them for 2-4 minutes and soak them for 20-30+ minutes since there shells are harder this time of the year. During the soaking process I either use ice or spray down the pot several times or even both to bring the water temperature down. Crawfish are more prone to overcooking during the boiling process compared to the soaking process.

I still agree with Kajungee. Be careful not to boil too long. If the meat breaks up when you are trying to peel them, then most likely they are overcooked. The tail will break apart and make it hard to eat the meat.
