Do any of you have any *simple* blue crab dip recipe that can be thrown together simply, as if you were in a vacation house without your normal pantry of items?

Crabmeat Ravigote. Very simple and delicious. Numerous recipes out there from Emeril's, Brennan's, La Seafood, etc. Most are uniform, so choose to suit your taste. Great served with toast points, to top a salad, with avocado, etc.
Fantastic dish with many uses.

Pound of crab meat
1 stick of butter
1 stick of cream cheese
2 tablespoons of Mayo
Herbs of your choice
1 teaspoon of thick mustard with seeds
Salt and pepper to taste

Put in a rice cooker and cook on low until melted completely.

Sometimes I chop an onion and cook in a skillet then add that too.

Pretend I don't have a rice cooker at my rented vacation house.

Double boiler: bowl over a pot with a little boiling water. Make sure the bowl is suspended over the water but not touching. Heat, stirring gently until the cream cheese melts and everything heats thru.

Best crab dip is simplest, Iagree. You want a quick n dirty camp style? Finely chopped onion, garlic, celery, sautéed in butter til soft. Add Old Bay or a few drops of liquid crab boil, a pound of claw crabmeat and melt in a block of cream cheese (dump it in the skillet). Season to taste with lemon, Worcestershire, dry mustard. Add some chopped green onions and parsley.

Or, if cream cheese is not an option, sub a can of cream of celery soup.

Or, use mayo and sour cream in lieu of the soup or cream cheese.

Just a way to heat everything without the risk of scorching the cheese.

Found this on TD about 15 years ago

Jalapeno Crab Dip:

1 1b of crab
1 tsp chopped garlic
1/2 cup pickled jalapenos chopped
Two blocks of monterey jack cheese (8oz each, or two preshredded packs)
1 tsp Worcestershire sauce
1 tsp hot sauce
1/2 tsp salt
1/2 cup mayo

Just put the mayo in bowl, add all ingredients except for crab. I only add one package of the cheese at this time. Mix it all together. Once mixed well you can then fold in the crab/shrimp/crawfish. Pour mixture into an oven safe dish, and top with second package of cheese. Bake at about 325 until it all melts, or you can use the microwave and just stir after every couple of minutes.

I normally add some sautéed onion to it also. Everytime I've made it, it is gone quickly
