Black Sesame Paste UPDATE: Ice Cream Pictures

I am super excited that this finally came in from amazon today. I am going to make black sesame ice cream with it, and as a matter of fact, the batter has already been cooked and is cooking off in the fridge. It tastes amazing. I am following the serious eats recipe.

That being said, what else can I do with this stuff? Any good recipes? I will use the rest to make more ice cream if nobody has any good suggestions but I would love to do something else with it.

When I tell you this stuff is good, I want you to believe it. I will be the first to admit that it isn’t for everybody. It is very nutty and could be compared to peanut butter, but could not be mistaken for peanut butter.

I have only had a soup and dumplings that was made with it. Both were interesting to say the least. It appears to be used in a few dessert recipes like tarts.

Is it any different in flavor than regular sesame paste? I know that black seasame seeds taste like regular beige ones.

If so, cold sesame noodles might be an interesting recipe to try.

Truth be told this is my first venture into sesame paste. My only other experience (which is extensive in this area) is with sesame and toasted sesame oil that I use all the time with miso ramen and fried rice. That being said, I can taste the same peanutty taste in this paste that I taste in the oil, but the black sesame paste has a distinct bitterness that the oils don’t have. It is not unpleasant bitterness however. It is in the same family that dark chocolate is in I would say.

Great job, dude. If I wasn’t brewing beer in all my free time, I’d be on this like white on rice.

Seems like you could use it like you'd use tahini. As you point out it's like peanut butter, it's a fat that can be used in a lot of applications. David Lebovitz has a recipe for chocolate chip tahini cookies that is really good. You might substitute this for regular tahini.
