Better Flour for Gluten-Free Roux: Millet or Rice?

Making a gumbo for some out of town guests and one person has a legit gluten allergy. Which flour is better?

Tell them to eat before they come.

Just make them a salad and cook the gumbo correctly

I use all purpose baking flour (gluten free). Bob's redmill brand. Can be found at rouses or whole foods
Makes an identical roux to regular flour. Ive taken it all the way to a black roux or as light as white roux. No difference in taste. Only thing i find is that it tends to bubble more when first added and cant bubble over easier if you are doing a microwave roux
