stopped by Bourque's this morning on way to work, store hours are 8:00a - 4:00p, located at 3211 Johnston Street. Their boudin is solid, consistent, and spicy. Known for their jalapeno, sausage, cheese bread - very good. They have a decent selection of meats. IMO, Kartchners and Best Stop have a better selection of meats. They also ship if you decide to order online in the future. Pics to help you out with your decision.
