I’m picking up on some confusion. Those top dollar gulf coast oysters aren’t the Gulf reef oysters we’ve been eating for decades. They are grown in cages or bags floating right above the surface. Hence they are not muddy or gritty. Totally different flavor profile and not the same product.

They are also sterile, triploid oysters, so they don't release sperm and you can eat them all year. Some of the best oysters I've ever eaten were farmed in Grand Isle and harvested in July.

Yes that’s correct they don’t reproduce or lose fat and sperm in the summer months when you find wild gulf oysters to be milky, chalk, and flaccid due to reproduction.

Yeah it’s Pigeon and Whale. Wife and I went for our anniversary dinner. Overall good, not great. Would go back and try some other items. We did chargrilled mussels, grilled octopus, squid ink pasta, sautéed mushrooms, and the lemon desert. Highlights were the mussels and dessert. The more charred parts of the octopus were great, pasta was pretty good, mushrooms were meh.

Find a place that has a dedicated oyster lease and eat oysters when the water is cold and salty and you can’t beat LA oysters. One oyster is worth 3 from the least Coast.
