I always ask for the rum/whiskey sauce on the side. Then you have the great texture and the sauce too if you want it (which I usually don't)

Louisiana bread puddings are the best hands down. I love the variety of ways to cook it. I got creative and used Krispy Kreme donuts instead of bread and it was fabulous. You only find ideas like that in Louisiana

yes, but it goes beyond NOLA and to most of the state. It really doesn't shock me that you prefer the bread pudding better in NYC considering there is much better, more substantial, bread up there that will hold some texture better than the soft, sponge-like stuff we have in Louisiana.
So many places have gotten really lazy with their bread pudding prep b/c so many people just order it without a second thought.

Best I've had was a place in Lake Charles. It was at a gas station, kind of by Barbe high school, Lake Charles country club. Mom and pop store. Damn, was that stuff good. Don't remember the name though.

If a place takes a piece of bread pudding from the reach-in and just puts a dollop of whiskey or rum sauce on the top and nukes it it will most likely be soggy. Throw that bad boy in a salamander for ~ 1 minute and it's a completely different story.

unfortunately seems to be the rule rather than the exception. The rum sauce seems to have been elevated to a tony's or ranch status...when in doubt, douse it.
