Hey tetu,
I know what u mean- it's like that here to- hit and miss with boudin stops- guess some times they'll use lower quality pork(prices at the time dictate their method, etc...) with their concoction- guess I got lucky the few times I stopped at Don's ...

Anyone know if the Don's in Carencro makes their boudin in-house (as opposed to transporting it from the other location)? Every time I stop there the boudin is money. No large chunks of fat or gristle. The cracklins are hit-or-miss though.
