Tell me more. I've been struggling with meat markets and butcher type places since moving to the Houston area a couple years ago. Only good place I've found thus far is in Rosenburg.

Bourgeois in Thibodaux makes the best jerky I've tasted. They use a different cut of meat than most. It's more like little 1/2" strips of meat than thin, flat sheets if that makes sense.
