Cut, Palazzo - The best ribeye I've ever had. I didn't pay, so that may have helped.
Holsteins, Cosmopolitan - Replaced burger bar as my go-to burger spot in Vegas. Last time I was there for a quick weekend, we went to Holsteins twice.
Mesa, Ceasars - The coffee rubbed filet mignon has a unique taste and it's cooked to perfection.

For a bach party, head to STK in the Cosmo. Great service, great food, and then head to Marquee for bottle service!

Many people won't believe you, nor would I if I hadn't tried it firsthand. Very good steak.
I'm a Vegas regular and I've never become tired of the "touristy" places.
Do yourself a favor and hit lunch on the patio overlooking the Bellagio Fountains at Mon Ami Gabi. Spiked shake and hamburger at Holsteins is a nice place to slum. Oh and you can't beat the hidden pizza joint at Cosmo after a night out.
I could go on and on with dining options, so maybe be more specific. Del Friscos steaks are pretty amazing as well.

Tom Colicchio's Craftsteak - I had a fantastic steak combined with some of the best seared scallops in the world here. Another great recommendation.

Every place I've eaten on the strip is an overpriced ripoff. Turning tables as fast as possible so they can put another pre-fabbed pale imitation of a dish from its "home" restaurant in front of drunks who don't know shite.
ETA: Yes, I'm talking about some of the biggest names that opened out there.

While I already put my two cents in... Allow me to second these suggestions. All three places I've been to on multiple occasions and have had some of the best meals of my life with them.
