Beef rib smoker then oven questions..

I was gifted an 8 lb, 4 bone, Snake River Farm "american-waygu" beef ribs. This 4 bone rib rack is about 14" long.
Should I have my butcher saw this 14" slab in half making 2, 4 bone slabs about 7" long? Want to prepare for Christmas and perhaps shorten smoke/cook time.
Simple, generous pepper,salt rub, hickory smoke on my offset smoker. Can I get away with 3 to 4 ours in smoker at 220-250 deg then transfer to oven at same temp to finish. Wrap in oven or not?
Question: I know smoking times vary to get to the 200-205dgeg internal, but what an estimate? 2, 4 lb racks: 3 hours in smoker, 2 to 3 in oven?
I don't want this to be an 8 to 10 hour ordeal Christmas morning/day. Or am I overthinking this?
Point me in the right direction. TIA

I personally wouldn't cut them. SRF beef ribs are my favorite thing to do. Simple cook, but everyone enjoys them. I don't generally wrap them at all on the offset. I would make 250 the minimum temp that you smoke at though and it will help speed things along a little.

At 250, without cutting them, 8 lbs, what can I expect for cook time?

Probably 6-8 hours. If you have free time a day or two before Christmas cook them then. Vac seal them and put in some hot water and then back on the smoker for 15-20 minutes to dry out the bark.

Yes.
Beef ribs typically take around 5-6 hours in my experience, but I don’t recall the weight of the ribs I’ve cooked in the past.

I mean if you don't have the time I have a smaller rack of 44 Farms beef ribs we can swap out to pair well with the other rack of SRF ribs I have in the freezer.

Could always smoke the day before then leave in the oven on low overnight
