Beef jerky

I just bought a nice dehydrator, what cut of meat do you use to make jerky (beef), what do you use for marinade, and how long do you let it sit?

Look for backwoods jalapeño jerky marinade on amazon or any place that you buy supplies from. I personally use any cheap cut of meat that is on sale so long as it doesn't have a lot of marbling. Here is a scenario where you can safely buy meat at Walmart. You want the leanest meat you can find.

I personally prefer sheets of jerky so I look for the larger roasts that I can cut super thin sheets off of. Anytime I walk by the meat case and see three or four packs marked down, I buy them and make jerky with them.

I bet a decent meat counter (even at a Winn Dixie) would thinly slice a roast for you if you asked nicely.

I have tried multiple times to get my meat cutters at my local Kroger and multiple super ones to thin slice a roast and as sure as God made little green apples they will come out with 2cm thick slices. I have tried multiple times to explain that I want thin sheets like lunchmeat and they all come out with the same thing. I just quit trying.
