Brine chicken (on the bone) for 3 hours, pat dry and apply rub. Let sit in fridge for an hour. Indirect heat on the grill with some wood chips. I like either pecan, or hickory/red oak mix. Cook till done. Apply a mustard passed sauce to glaze. I like Jay Ducote's Mustard Molasses or Lem's Meat Varnish. Eat.

I do all of the above with whole chicken, brine for 5 hours, and cook on a rotisserie over coals until done, glaze with sauce.

Problem I have is the chicken around here. Tyson hormones, giant, tough as hell, tasteless chicken I won't buy anymore. I get free range normal chicken when out of town.
Also Tandori style is awesome on the BGE as I cook that at 500 degrees.

I'm in the minority but when summer comes, my favorite food is BBQ chicken with grilled sweet corn and some bacon snap beans or butter beans
I like to char the outsides and give a good grill mark on high heat, then 300 for about 40 minutes. Nothing but rub until last ten when I baste it with sauce
