I've been checking out a lot of his recipes and YouTube vids. He just put out a 4 bone prime rib one I'm going to try for Xmas. Anyone else follow Malcolm?

Killer Hogs

Yeah, Malcolm Reed is pretty solid. Definitely agree that he has some great videos on his Youtube channel.

The only thing I'll say is that I think he often goes a little overboard on ingredients. Some of his recipes will have something like 30 ingredients at times.

Yeah I just figure the ingredients part is variable based on what each person prefers. The process is what I like to watch and learn from as a complete novice smoker. I used his rib and pork butt vids for. My first time and both came out pretty dang good.

I damn near had a heart attack just watching his pork belly video... starts off fairly normal until about 4 minutes in:

He has some pretty good videos but a lot of his recipes are overkill. There's no mystery as to why he looks like he does.

It's completely unnecessary to use parkay, honey, and brown sugar on some baby backs.
