My first choice would be for the breasts to remain connected to the whole chicken and cooked like that ( or spatchcock); but if it has been decoupled, I’d be hard pressed to find a better method than sous vide for perfectly cooked (“done-ness”, moisture, and tenderness). Beyond that it is a blank slate for marinades, finishing (fire, skillet, etc.)
