Baconstein Bacon Jerky by sograte. Anyone ever made anything similar?

Has anyone ever made bacon jerky?
There was a company from Texas called sograte, but they went out of business. They sold this bacon jerky online called baconstein. I’d love to try to make something similar if anyone has ever had it or re-created something similar.

Yep, make teriyaki bacon jerky all the time. Good stuff.

Use thick cut bacon

I marinate my bacon overnight in some teriyaki and soy sauce, with some brown sugar, lea and perrins, and wasabi. Not sure measurements, I just eye ball it.

You can marinate or put rub on it anyway you want, but after that you can follow the same steps here.

Oven to 200F, layout your bacon single layer on something so you can get the grease out. Put your rub on here if you want, I usually add a bit more brown sugar on top for teriyaki.

Bake for 45 minutes, pat bacon dry and flip, then pat other side of bacon dry, add rub or brown sugar to the other side after flip. Drain pan of fat if necessary.

Bake for another 45 minutes, drain fat, pat dry both sides. Put in Dehydrator for 8-12 hours and flip every so often patting dry to get moisture out til you are happy with result.

I've done it with steak seasonings like Montreal and it works great too.

So if I were to do it on a recteq smoker, it needs to be finished in dehydrator after?
