Anyone order meat from Robertson's Hams? Weird it arrives unrefrigerated.

I ordered a turkey and some sausage. It came room temperature in a regular cardboard box.
I asked them if it was safe to eat. They assured me they have been shipping like that for 75 years and the meat is smoke cured and good for 7 days unrefrigerated.
I've heard that before and know it's been done that way for a long time, but I'm still nervous to eat it.
Anyone have any insight on smoke cured meat.
