Anyone have any good slow cooker recipes they would care to share?

Lately my wife and I have only found time to cook the good stuff on weekends. We figure we'll try some slow cooker meals during the week

You may catch crap for starting yet another slow-cooker thread with the many that already exist.

With that said, I have tried a lot of different recipes - the Mississippi roast, etc. The best thing I have ever had from a crock pot is also the easiest.

Get a 2 to 3 pound chuck or sirloin roast. I prefer the chuck roast with a lot of fat. Put a can of regular - not the low sodium or reduced fat - Campbell's cream of mushroom soup in the pot. I use the slow cooker liners as it makes cleanup a lot easier. Put the roast on top of the soup and pour another can of the mushroom soup on top. Cook on low for 10 hours. You will have the best roast with mushroom gravy you have ever tried. Eat over rice, with mashed potatoes or over bread of your choice.

The 2nd best thing is a pork butt. Get the Hawaiian Red Alaea Salt and generously cover the butt in it. Then wrap the butt with banana leaves - sold at a Mexican grocery store here in Houston - and cook on low for 10 hours. This will create the most tasteful, moist and tender pulled pork outside of a Kalua Pig cooked in the ground.

ETA: wrap the roast and banana leaves in foil and then cook on low for 10 hours.
