Anyone have a shrimp and merliton casserole recipe?

Never made it but always liked it. Bought 12 merlitons to give it a shot. Just need a good "non Food Network" recipe

I don't follow an official recipe but I use these ingredients:
Mirlitons
Jimmy Dean Pork Sausage
Cooked rice room temp(don't overcook)
Shrimp
Chicken Stock
Onion
Celery
Bell Pepper
Garlic
Green Onion
Parsley
Italian Breadcrumbs
Salt
Pepper
Hot Sauce

I cut the mirlitons in half and berl them. Then when soft I peel them.
Brown the sausage
Cook the veggies in the sausage grease
Add stock
Add back in sausage
Cook everything down until liquid is reduced
Add rice
Add shrimp at the end(should still have some liquid in pot, if not add some stock)
Add breadcrumbs
Put in a disposable pan, and brown the top
None left every year

Thanks man. Followed your recipe closely but like you, I dont follow a recipe haha.

Used tons of onions, bell peppers, celery.

Roasted the mirlitons instead of boiling. That took forever.

Saw a few recipes that added cream and a couple of eggs to the mix before baking so I tried that.

It came out tasting delicious but the bread crumbs on top didnt brown in the oven. Kinda looked like a soggy ritz cracker on top. I think next time ill use panko bread crumbs on top and toss them in butter first.

Yeah definitely need butter or oil mixed in with whatever bread crumbs

I knew I had to do that but was scared the butter would turn the bread crumbs into a ball of buttery breadcrumbs. I just plopped a bunch of butter on top but it didnt spread out.

I have seen cream and eggs in some recipes, I have never done that though. Might give it a shot next time.
I usually end up putting the broiler on at the end to brown the breadcrumbs.

Not sure if you did this but I also add some breadcrumbs before I put in the pan to soak up that excess moisture.
