Anyone have a good quiche recipe?

Looking to make a quiche. I dont necessarily need a recipe on what to add to it(mushrooms, ham, bacon) but what to use as a base. Ive seen some online that say you can use cottage cheese/ yogurt for a healthier version or milk, cream, half and half. Is a crust necessary for a quiche to cook properly? I dont know much about quiches so any info would be good.


I would also like to start making them to incorporate some veggies into my diet for a quick cut and heat breakfast.

Milk and swiss cheese for additions to the eggs, saute some onions and shrooms and let cool. Chopped cooked bacon.

I've made the Thomas Keller one also. It's killer. To do it right you need to plan a day or so ahead. The crust is the best quiche crust I've ever tasted, it's perfect. If the rest of the recipe is too time consuming at least use the crust recipe. It's not that hard to do.

Crustless quiche or frittata
Bacon, cheese, spinach, tomato

12 eggs, 1 cup mayo, 1 can cream, season to taste. 2 cups cheese of choice. Mix pour over meat & veggies in pan, bake until when inserting a tooth in the middle comes out clean..
