That sounds good as the rind has a cucumber taste to it already.

I've had that before and it's good, but I've never made them.

My sister-in-law shared her recipe for candied pumpkin rind that I made many years ago, but it's so damn sweet I dare not keep it around, but it's a nice treat during the fall holidays. I'll have to ask her for her recipe again since I lost it.

Haven't thought about those in years. I remember making them when our sons were kids. The only thing I remember is using those little red hot candies in them. Made them really red and added a little cinnamon zip. Still needed sugar and a week or so in the jar, but that is all I remember. Sorry, but I guess others have shared recipes so maybe you are ok.
