I haven't eaten tongue since my mother passed away. If I remember correctly mama would boil the tongue a little while in order to make the outer skin easier to remove. I remember seeing her scraping and pulling the skin off. Maybe someone can verify if it is necessary to boil it to get the skin off. After washing it, she would then stuff it like a roast, with garlic, and put it in the red gravy on Sundays with the meatballs. Mom also cooked tongue in a stew with potatos and carrots. She cooked it whole and then sliced it in about three quarter inch slices after it was cooked. The tongue was tender and had a great flavor. Stuffing it with garlic is key.

Yes I parboil it to make it peel. And I imagine if mama put this in a red gravy with meatballs you lived one lovely childhood.
