Any snow goose recipes?

I have never eaten and heard they can b tough.
Any good outcomes from cooking?

Breast and marinate.

Put em in a gumbo with some other stuff.

Call them company birds....

Not very good, have to marinate them well. Buttermilk can help, but they can be filler in gumbo.

Now specks.... that shite is like steak.

I got a couple of Emperor geese from the native side of the family that habe been in the freezer.

I've got them roasting in the oven to put in a gumbo :lol.

425 for 30 minutes then 325 for another 30 to 45 minutes. Pick it then make gumbo

Marinate

Slow roast on smoker then indoors

I mean slow - cook for 6-8 hours - once inside I use apples, oranges and celery in the cavity

Inject with butter garlic
