after you are done with your crawfish, re-spice your water as if you were putting another batch to boil. then, put a whole chicken in it and boil till tender. de-bone chicken and shred it with onions and bellpeppers. make chicken salad (for sandwiches). makes the best chicken salad sandwiches ever.

Done it both ways, doesn't matter but leave the skin on so it stays together.

Basically if it's a vegetable it can go in there and come out tasty. Onions, peppers, carrots, beans of all varieties -- all of that stuff comes out quality. I guess I've never tried celery.

A piece of meat at the end is great for absorbing the flavor and making something tasty from it down the road.
