Advice for friend coming from Chicago

Hi all, I have friend coming to New Orleans staying at the Marriott on Canal. He is looking to get a good taste of louisiana food and I'm coming to you for suggestions. He mentioned wanting to try jambalaya, boudin and gumbo if possible. He will be in the entire week for a conference so anything is game. Thanks in advance!
