A Recpe For Braised Collards

I did this the other night and it was very good.
Ingredients
1 large bag of cut, pre washed collards
2 slices of thick bacon, diced
3 cloves garlic, minced or finely sliced
1 to 1.5 cups chicken stock
1 to 1.5 cups white wine
2 T lemon juice
Salt and pepper to taste
Method
In a Dutch oven, fry the diced bacon over medium heat. When crisp, remove and add the greens and garlic. After 45 seconds to a minute, add the wine , stock, salt and pepper. Lid it and simmer on med low for 10-15 minutes. Then add the lemon juice and adjust the salt and pepper to taste, cooking just until the greens are soft...maybe 5 minutes more. Add the bacon back to the dish and serve.

I like to add a diced yellow onion and sauté that and garlic with the bacon fat then wilt the greens. Other than the wine and lemon juice, that's how I do them.

pretty much what we do, minus the wine. can you taste anything from the wine?

Yep. The wine and lemon juice add a different twist.

Nice recipe;the only things I would change would be fresh collard greens and pickle juice for the lemon juice. Sometimes I add in some spinach to mellow it out a bit.

any acid pretty much does the same thing
