I did a little experimenting over the weekend. cooked the ribs the way I normally would.

coated a few with seasoned flower

a few with seasoned flour and corn starch

and a few with Zatarain's chick fry.

I didn't use any kind of binder since they were already wet.

The wife (no pics) preferred the flor/corn starch version.

I preferred the chick fry version but, probably because i just like that flavor/texture.

Pretty sure sure I fried them a little 2 long. roughly 5 min. next time i may cut that in half.


And of course i failed to take pics. i'll downvote my self.

Try a few raw next time. I loved the seasoned flower texture on those. You can see it in the pic I posted. It looks heavy, but it's only flour and not as heavy as it looks.

see we dont coat them, we fry them straight on the bone after seasoning. kind of like a big ole cracklin, love them like that. never had them battered.
