Wife just did a red beans and rice in the crock pot yesterday. I was skeptical, but damn if it didn't turn out great.
I do a chicken taco recipe in the crock pot.
6 frozen chicken breasts
2 cans of black beans
1 jar of salsa
And whatever combination of onions and peppers you desire.
Remove chicken (carefully, since it's so tender), shred, and serve with tortillas, cheese, pico, guacamole, etc. Beans as a side dish.
As long as you start with frozen chicken breasts, you can put it on before leaving for work and have it ready for dinner. 9 to 10 hours no problem. But if your chicken breasts are already thawed, don't go much longer than 6 hours unless you like dry chicken. Don't ask me how I know.
