Not my recipe but one I had last year had a bunch of bay leaves in it. I enjoyed it.

I have never had a crawfish boil with too much lemon. Been to many without enough. Outside of heat levels, I think citrus is most important flavor. I usually add oranges to the lemons

The weight of the boiling sack they come doesn't keep them from floating?

Do you halve or quarter? How long are they in the boil for? I did them one time but most disintegrated into the boil. The bits that remained intact were great.

I slice them into disk and toss them with the crawfish, maybe a little before if they are thick

The lose their punch, put them right at the end there will be a noticeable difference. Try it out.
